Heat the olive oil in a large pot or Dutch oven over medium heat.
Add the diced onion and cook for about 5 minutes, or until the onion is translucent.
Stir in the minced garlic and diced red bell pepper, cooking for an additional 2 minutes until fragrant.
Add the diced sweet potatoes, cumin, chili powder, smoked paprika, salt, and pepper. Stir well to combine.
Pour in the diced tomatoes (with juices) and vegetable broth. Bring the mixture to a boil.
Reduce the heat to low, cover, and let it simmer for about 20 minutes, or until the sweet potatoes are tender.
Stir in the black beans and continue to cook for another 5 minutes to heat through.
Taste and adjust seasoning, adding more salt and pepper if needed.
Serve hot, garnished with optional toppings such as avocado, cilantro, and lime wedges.
