Preheat your oven to 350°F (175°C). Combine crushed gingersnap cookies with melted butter and press into the bottom of a springform pan.
Bake the crust for about 10 minutes and let it cool.
Boil or steam sweet potatoes until soft, then drain and mash until smooth.
In a large mixing bowl, beat cream cheese until smooth.
Slowly add granulated and brown sugar, mixing well.
Add mashed sweet potatoes, sour cream, vanilla, cinnamon, and ginger to the mixture and combine until smooth.
Pour filling over the cooled crust and spread evenly.
Bake in the oven for about 30 minutes until the center is set but still jiggles slightly.
Let the cheesecake cool before refrigerating for at least 4 hours.
Serve with whipped cream or salted caramel sauce on top.
