  • 2 lbs Chicken thighs boneless, skinless, cut into strips
  • 4 cloves Garlic finely minced
  • ¼ cup Soy sauce salty goodness
  • ½ cup Hoisin sauce adds a sweet and tangy layer
  • 2 tablespoons Brown sugar to balance the spice
  • 2 tablespoons Sambal oelek chili paste for heat
  • 1 Fresno chili thinly sliced
  • cup Kewpie mayonnaise creamy, rich
  • 1 ½ tablespoons Sriracha hot sauce for spicy mayo drizzle
  • ½ head Iceberg lettuce cored and quartered
  • 8 Wonton wrappers cut into strips, fried crispy
  • ¼ cup Roasted peanuts roughly chopped

  • Mix the spicy mayonnaise by combining ⅓ cup Kewpie mayonnaise and 1 ½ tablespoons Sriracha hot sauce in a small bowl. Refrigerate until ready to serve.
  • Cut wonton wrappers into thin strips. Air fry at 400°F for 5-7 minutes until golden brown and crispy.
  • Whisk together soy sauce, hoisin sauce, brown sugar, and sambal oelek in a medium bowl until combined.
  • Heat 2 tablespoons oil in a large skillet over medium-high heat. Add chicken strips and brown without tossing for 2-3 minutes.
  • Toss chicken to brown other sides and add minced garlic. Stir for 1-2 minutes until aromatic.
  • Pour prepared sauce into skillet with chicken, reduce heat to medium-low, and stir until sauce thickens and coats chicken. Remove from heat and add sliced Fresno chili. Let cool slightly before serving.
  • Serve chicken mix in lettuce leaves with spicy mayo drizzle, chopped peanuts, and crispy wonton strips.

Notes

Remove excess liquid after cooking chicken for best results. Add splash of water if sauce reduces too fast. Use pre-minced garlic to save time. Keep lettuce leaves crisp by storing in fridge wrapped in paper towels. Wonton strips can be made ahead and stored airtight.
