Taco Chili Done Right In Your Pressure Cooker

  • 1 lb Lean ground beef the star that gets a tender, delicious pull
  • 1 Sweet onion chopped
  • 2 cans Diced tomatoes 28oz cans
  • 1 can Black beans 15oz, rinsed and drained
  • 1 can Corn 8.75oz, drained
  • 1 bottle Taco sauce 8oz
  • 1 can Green chilies 4oz
  • 2 tablespoon Taco seasoning packet flavor booster
  • 1 tablespoon Chili powder flavor booster

  • Brown your lean ground beef in the pressure cooker pot over medium heat. Don’t rush this or you get tough bites. Once browned, drain any excess fat to keep it from getting greasy.
  • Toss in your chopped sweet onion and cook it down until it gets soft. This usually takes about 5 minutes and adds a nice mellow flavor that complements the beef.

  • Stir in diced tomatoes with their juices, black beans, corn, taco sauce, and chopped green chilies. Give it a good mix so everything’s kinda blended but still chunky.

  • Sprinkle in your taco seasoning and chili powder. Stir again to evenly spread those spices through the whole pot.

  • Lock on your lid and make sure the sealing ring is properly in place. Set your pressure cooker to high pressure and let it build up steam. Cook for 10 minutes on high pressure.
    Once cooking time is up, go for a slow release to keep the chili’s texture tender. When the pressure releases naturally, open the lid carefully. Serve hot topped with shredded cheese, green onions, and nacho chips or your fave toppings. Don’t forget a dollop of sour cream if you like.
