  • 1 pound lean ground beef for that hearty base
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 ounce taco seasoning packet
  • 1 cup enchilada sauce divided
  • 1.5 cups frozen corn kernels thawed
  • 1.5 cups bell pepper diced, red, yellow or green
  • 15 ounces canned black beans drained and rinsed
  • 3 cups shredded cheddar cheese divided
  • 16 ounces frozen tater tots
  • 0.33 cup salsa optional
  • toppings as desired like sour cream, jalapeños, or green onions

  • Preheat oven to 375°F.
  • Fire up a large skillet over medium heat. Cook the ground beef till it's all browned. Drain any fat.
  • Throw in the diced onion and minced garlic to the skillet with the beef. Cook till the onions turn see-through and soft.

  • Stir in the taco seasoning and half the enchilada sauce. Let it cook for about two minutes, stirring so the flavors blend well.

  • Take the skillet off heat and stir in thawed corn, diced bell pepper, and black beans. Mix it all up.

  • Spread the beef mix evenly in a greased 9x13 inch baking dish.
  • Layer frozen tater tots on top in a single, even layer. Pour the other half of enchilada sauce on top.

  • Sprinkle 2 cups of shredded cheddar cheese over the sauce layer.

  • Bake in oven for 25-30 minutes until tots are golden and crispy.
  • Combine salsa and remaining ⅓ cup enchilada sauce. Spread over tater tots and top with remaining cheese.

  • Bake an additional 10 minutes or until cheese is melted and bubbly. Serve with desired toppings.
