  • 1 ¼ lbs. Boneless skinless chicken breasts diced into 1-inch cubes
  • 1 tablespoon Olive oil for searing
  • ¼ cup Low-sodium soy sauce
  • ¼ cup Water
  • 2 tablespoon Honey
  • 1 ½ tablespoon Packed light brown sugar
  • 1 tablespoon Rice vinegar
  • ¼ teaspoon Toasted sesame oil
  • 2 teaspoon Fresh ginger peeled and minced
  • 2 teaspoon Fresh garlic peeled and minced (about 2 cloves)
  • 2 teaspoon Cornstarch for thickening
  • Sesame seeds and chopped green onions for serving (optional)

Instructions

  • Heat olive oil in pressure cooker on sauté mode or in a skillet over medium-high heat.
  • Add diced chicken and cook until golden brown, about 5-7 minutes.
  • While chicken cooks, whisk together soy sauce, water, honey, brown sugar, vinegar, sesame oil, garlic, and ginger in a bowl.
  • Pour sauce over chicken and stir. Lower heat and simmer 3-5 minutes until sauce thickens.
  • If pressure cooking, transfer mix, seal lid and cook on high pressure for 6 minutes.
  • Let pressure naturally release for 5 minutes, then use slow release. Serve hot garnished with sesame seeds and green onions.

Notes

Serve over hot rice or steamed veggies. Leftovers can be refrigerated up to 4 days or frozen for easy reheating.
