Heat olive oil in pressure cooker on sauté mode or in a skillet over medium-high heat.
Add diced chicken and cook until golden brown, about 5-7 minutes.
While chicken cooks, whisk together soy sauce, water, honey, brown sugar, vinegar, sesame oil, garlic, and ginger in a bowl.
Pour sauce over chicken and stir. Lower heat and simmer 3-5 minutes until sauce thickens.
If pressure cooking, transfer mix, seal lid and cook on high pressure for 6 minutes.
Let pressure naturally release for 5 minutes, then use slow release. Serve hot garnished with sesame seeds and green onions.
Notes
Serve over hot rice or steamed veggies. Leftovers can be refrigerated up to 4 days or frozen for easy reheating.
