Ingredients
  

  • 2 cups ripe tomatoes, diced
  • 2 cups seedless melon (like cantaloupe or honeydew), diced
  • ¼ cup red onion, thinly sliced
  • ¼ cup fresh basil leaves, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar

Instructions
 

  • Begin by dicing the ripe tomatoes and seedless melon into bite-sized pieces. Place them in a mixing bowl.
  • Thinly slice the red onion and add it to the bowl with the tomatoes and melon.
  • Chop the fresh basil leaves and add them to the mixture.
  • In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
  • Drizzle the dressing over the salad mixture and gently toss to combine all ingredients evenly.
  • Transfer the salad to a serving platter and garnish with more fresh basil if desired.
  • Serve immediately, or refrigerate for up to 30 minutes to enhance the flavors.

Notes

For added flavor, you can include crumbled feta cheese or mozzarella balls.
This salad is best enjoyed fresh but can be stored in the refrigerator for up to one day.
