- 1 cup rolled oats
- 1 cup coconut milk or any dairy/non-dairy milk
- ½ cup diced pineapple fresh or canned
- ½ cup diced mango fresh or canned
- 1 banana sliced
- 2 tablespoons shredded coconut unsweetened
- 2 tablespoons honey or maple syrup (optional for sweetness)
- 1 tablespoon chia seeds optional for added nutrition
- ½ teaspoon vanilla extract
In a mixing bowl, combine the rolled oats, coconut milk, honey or maple syrup (if using), and vanilla extract. Stir well to combine all ingredients.
Add the chia seeds to the mixture and mix again. The chia seeds will help thicken the oats as they soak overnight.
Layer half of the diced pineapple and mango into the bottom of each storage container.
Pour the oat mixture evenly over the fruit layers in both containers.
Top with the remaining pineapple and mango, then add the sliced banana and sprinkle with shredded coconut.
Seal the containers with lids and refrigerate overnight (or for at least 4 hours) to let the flavors meld and the oats soften.
In the morning, stir the oats before serving. Enjoy them cold or heated gently in the microwave if preferred.
You can customize the recipe by adding other tropical fruits such as papaya or kiwi.
These oats can be kept for up to 3 days in the refrigerator.
For a vegan option, ensure you use plant-based milk and a vegan sweetener.
