Ingredients
  

  • 1 pound ground turkey
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced any color
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes, with juices
  • 2 cups chicken broth
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Instructions
 

  • In a skillet over medium heat, brown the ground turkey until it's no longer pink. Drain any excess fat and add to the crockpot.
  • Add the chopped onion, minced garlic, and diced bell pepper directly into the crockpot.
  • Stir in the black beans, kidney beans, diced tomatoes (with their juices), and chicken broth.
  • Sprinkle the chili powder, cumin, paprika, salt, and black pepper over the mixture. Stir well to combine all ingredients.
  • Cover the crockpot with its lid. Cook on low for 6 hours or on high for 3 hours, stirring occasionally if possible.
  • Once cooked, taste and adjust seasoning if necessary. Serve hot, topped with your choice of optional toppings.

Notes

This turkey chili can be made ahead of time and stored in the refrigerator for up to 3 days or frozen for up to 3 months.
Feel free to add additional vegetables such as corn or zucchini, or adjust the spice level by adding jalapeños or cayenne pepper.
Serve with crusty bread or over cooked rice for a full meal.
