Ingredients
  

  • 4 pieces boneless, skinless chicken breasts about 1.5 pounds total
  • 1 tablespoon olive oil
  • 3 cloves garlic minced
  • 1 cup sun-dried tomatoes packed in oil, drained and chopped
  • 1 cup heavy cream
  • 1 cup fresh spinach
  • 1 teaspoon Italian seasoning
  • to taste salt
  • to taste pepper
  • ½ cup grated Parmesan cheese
  • fresh basil leaves for garnish

Instructions
 

  • Season both sides of the chicken breasts with salt and pepper.
  • In a large skillet, heat the olive oil over medium-high heat. Once hot, add the chicken breasts and cook for about 5-7 minutes on each side until they are golden brown and cooked through. Remove the chicken from the skillet and set aside.
  • In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant.
  • Add the chopped sun-dried tomatoes and cook for another 2 minutes, stirring constantly.
  • Pour in the heavy cream, and add the Italian seasoning. Stir to combine and bring the mixture to a gentle simmer.
  • Return the chicken to the skillet, allowing it to simmer in the sauce for 5 minutes.
  • Add the fresh spinach and grated Parmesan cheese, stirring until the spinach wilts and the cheese melts, creating a rich and creamy sauce.
  • Taste and adjust seasoning with salt and pepper as needed.
  • Serve the Tuscan Chicken hot, garnished with fresh basil leaves.

Notes

For a lighter version, you can substitute heavy cream with half-and-half or a lower-fat alternative.
Serve with pasta, rice, or crusty bread to soak up the creamy sauce.
