Ingredients

Main ingredients

  • 1 ½ cups oat flour gluten-free if you need it
  • ¾ heaped cup ground nuts walnuts or almonds work great
  • ½ cup granulated sweetener could be sugar or a natural alternative
  • 1 ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 ½ teaspoon cinnamon to boost that cozy vibe
  • ½ teaspoon allspice totally optional but I love it
  • ½ teaspoon cardamom for some extra warmth (optional)
  • ⅓ teaspoon salt to balance flavors
  • ⅔ cup plant-based milk almond or oat milk is perfect
  • 1 small ripe banana mashed or ⅓ cup applesauce for moisture
  • 1 tablespoon lemon or lime juice to brighten things up
  • 1 teaspoon vanilla extract for flavor
  • 3-4 plums sliced, ripe but firm
  • 1 tablespoon maple syrup for topping
  • 1 tablespoon sugar to sprinkle on plums

Instructions

Instructions

  • Prepare your cake pan by greasing it well or lining it with parchment so the plums peel right off when you flip it.
  • Toss all the dry ingredients (oat flour, nuts, sweetener, baking powder, soda, cinnamon, and spices) in a bowl and stir until evenly mixed.
  • Mash the banana or scoop the applesauce into a separate bowl, then add the plant milk, lemon juice, and vanilla. Mix until smooth.
  • Slowly combine wet and dry ingredients, stirring until you get a thick, sticky but smooth batter.
  • Spread the sliced plums in the pan, arranging them pretty side down. Sprinkle sugar on top to help caramelize while cooking.
  • Pour your batter over the plums, making sure it covers them evenly. Close the lid, seal it up, and set to high pressure.
  • Let it cook for about 20 minutes, then use natural release to keep the cake tender and prevent shrinking.
  • When steam cues slow, carefully open and let the cake cool a bit before flipping it onto a plate.

Notes

Serve warm or at room temperature, especially wonderful with a cup of tea. Store in an airtight container; refrigerate or freeze for longer storage.
