  • 1 cup Shredded Carrots fresh
  • ½ cup Bean Sprouts rinsed and drained
  • ½ cup Chopped Shiitake Mushrooms
  • 2 cloves Garlic minced
  • 1 tablespoon Soy Sauce or tamari for gluten-free
  • 1 teaspoon Sesame Oil toasted
  • ¼ teaspoon Salt
  • ¼ teaspoon Black Pepper freshly ground
  • 8 sheets Spring Roll Wrappers rice paper or wheat-based
  • 1 tablespoon Olive Oil for brushing
  • 1 tablespoon Chopped Fresh Cilantro optional
  • 1 tablespoon Chopped Fresh Basil optional
  • 1 teaspoon Grated Ginger fresh
  • ½ cup Cooked Rice Noodles thin vermicelli
  • 1 tablespoon Lime Juice freshly squeezed
  • 2 tablespoon Peanut Butter for dipping sauce
  • 2 tablespoon Soy Sauce for dipping sauce
  • 1 tablespoon Maple Syrup for dipping sauce
  • 1 teaspoon Chili Garlic Sauce optional, for dipping sauce

  • Preheat the oven to 400°F (200°C).
  • In a large bowl, combine shredded cabbage, carrots, bean sprouts, mushrooms, garlic, grated ginger, cooked rice noodles, cilantro, and basil.
  • Add soy sauce, sesame oil, lime juice, salt, and pepper. Mix well to combine all ingredients.
  • Lay out the spring roll wrappers on a clean surface. Place about 2 tablespoons of filling on each wrapper.
  • Roll the wrappers tightly into spring rolls, folding in the sides to seal the filling.
  • Place the rolls on a baking sheet lined with parchment paper. Brush each roll lightly with olive oil.
  • Bake in the preheated oven for 20-25 minutes, turning halfway through, until golden and crispy.
  • While baking, prepare the dipping sauce by mixing peanut butter, soy sauce, maple syrup, and chili garlic sauce in a small bowl.
  • Serve baked spring rolls warm with the dipping sauce on the side.
