First, heat your olive oil in a large frying pan over medium heat. You want it nice and warm but not smoking.
Add the finely sliced onion and red bell pepper. Cook them about 5 to 7 minutes till they soften and start smelling sweet.
Toss in the chopped garlic and cook just another minute. That garlic aroma gotta hit you before the next step.
Now dice those potatoes into small cubes and add them into the pan. Give everything a good stir so they get coated with oil.
Cook the potatoes stirring occasionally for 15 to 20 minutes. You noticing them getting golden and tender? That means you’re on the right track.
Next, add your sliced greens, black beans, cumin, smoked paprika, and salt plus pepper. Stir it all up good so the spices spread evenly.
Let it cook for another 3 to 5 minutes till greens wilt and everything heats through real nice.
Finally, adjust seasoning if you need to. Serve hot and enjoy that satisfying scent and flavor you remember.
