Heat olive oil in a big skillet over medium heat and add thinly sliced onions. Stir every few minutes for about 20–25 minutes until they are golden and caramelized.
Add splashes of water occasionally to deglaze the pan and avoid burning.
Add garlic, Italian seasoning, and red pepper flakes (if using). Stir for 2–3 minutes until aromatic.
Stir in sun-dried tomatoes, balsamic glaze, and soy sauce. Cook for another 2 minutes.
Reduce heat and add vegan cream. Stir until warmed through and sauce thickens slightly.
Meanwhile, cook pasta according to package instructions. Reserve some pasta water before draining.
Add cooked pasta to the skillet. Mix well and add reserved pasta water as needed to loosen sauce. Garnish with parsley, salt, and pepper. Serve hot.
Notes
Store leftovers in airtight containers for up to 3 days. Add a splash of water or broth when reheating to maintain sauce texture.
