  • 0.5 white onion White onion diced small
  • 6 cloves Garlic chopped
  • 12 oz Vegan beef Beyond Beef preferred
  • 1 can Black beans drained
  • 1 can Corn drained
  • 1 cup Crushed tomatoes canned
  • 1 can Hatch green chilies
  • 1 Taco seasoning
  • soft flour tortillas Flour tortillas for layering
  • 1 can Vegetarian refried beans
  • 1 cup Vegan cheddar style shreds for topping
  • Salsa, guacamole, vegan sour cream, black olives, green onions, lettuce, cilantro optional toppings
  • Salt and pepper to taste

  • Preheat oven to 375°F.
  • Pour olive oil into a big skillet over medium heat and heat until sizzling. Add diced onion and sauté.

  • Add chopped garlic and stir until fragrant.

  • Add vegan beef and brown it slightly to add texture and flavor.

  • Stir in black beans, corn, crushed tomatoes, hatch green chilies, and taco seasoning. Let simmer for 5 to 7 minutes.

  • Grease a baking dish and layer with soft flour tortillas and beef mixture, finishing with a final beef layer.

  • Cover with foil and bake in the oven for 20 to 25 minutes.
  • Remove foil and bake uncovered for 5 more minutes to crisp the top.
  • Let casserole stand for 5 minutes to settle before slicing and serving.
  • Top with vegan cheddar shreds and optional toppings like salsa, guacamole, vegan sour cream, black olives, green onions, lettuce, or cilantro.

Notes

Store leftovers in airtight containers in the fridge up to 3 days or freeze up to 3 months. When reheating, add a splash of water or broth to keep moist and heat gently.
