  • 2 lb boneless, skinless chicken breasts hearty base, soft and shreddable
  • 2 tablespoons ground cumin brings earthy warmth
  • 1 tablespoon chili powder adds mild fire
  • 1 tablespoon smoked paprika gives smoky depth
  • 1 tablespoon garlic powder for flavor enhancement
  • 0.5 teaspoon salt if using low sodium chicken broth
  • 1 red onion chopped
  • 2 red bell peppers chopped
  • 1 jalapeno pepper finely chopped, omit seeds for less heat
  • 15 oz diced fire roasted tomatoes canned
  • 30 oz black beans 2 cans, drained and rinsed
  • 8 oz frozen corn
  • 4 cups low sodium chicken broth
  • 1 lime juice juice of 1 lime, added at the end
  • to taste black pepper or cayenne pepper for extra heat if desired
  • optional toppings tortilla chips, shredded cheese, diced avocado, sliced green onion, Greek yogurt or sour cream, jalapeno slices, lime wedges, fresh cilantro

Instructions

  • Place the chicken breasts right into your slow cooker base.
  • Sprinkle ground cumin, chili powder, smoked paprika, garlic powder, and salt over the chicken.
  • Add the chopped red onion, red bell peppers, and jalapeno pepper next. Toss in the diced fire roasted tomatoes with their juices too.
  • Pour in the chicken broth just enough to cover all the ingredients.
  • Cover with the lid, making sure the sealing ring is set. Cook on low for about 6 to 8 hours or high for 3 to 4 hours, depending on your timing preference.
  • When done, open the lid and watch the float valve drop. Use slow release to let out steam safely, or quick release if in a hurry while watching the valve hiss closely.
  • Take out the chicken breasts and shred with two forks. Stir the shredded chicken back into the pot. Squeeze in fresh lime juice. Taste and add black or cayenne pepper if desired. Serve with your favorite toppings.

Notes

Serve warm with optional toppings such as tortilla chips, shredded cheese, diced avocado, sliced green onion, Greek yogurt or sour cream, jalapeno slices, lime wedges, and fresh cilantro for extra flavor and texture.
