  • 1 pound Ground beef with some fat for juiciness
  • 1 small Onion chopped finely
  • 1 packet Taco seasoning
  • 0.5 cup Water to simmer with seasoning
  • 15 ounce Black beans rinsed and drained
  • 10 ounce Diced tomatoes with green chiles
  • 0.5 cup Sour cream half mixed in
  • 9.25 ounce Fritos corn chips for layering
  • 2 cups Mexican-style shredded cheese for melting on top and layers
  • to taste Green onions sliced for garnish
  • to taste Extra sour cream for serving
  • to taste Guacamole for topping
  • to taste Salsa for topping
  • to taste Jalapenos for heat

  • Preheat your oven to 350°F to prepare for the finishing bake.
  • In a large skillet over medium heat, cook the ground beef and finely chopped onion until the beef is no longer pink. Drain off excess fat.
  • Stir in the taco seasoning and half a cup of water. Bring to a boil, then reduce heat and simmer for 5 minutes to blend flavors.
  • Add black beans and diced tomatoes with green chiles, stirring well. Remove from heat and fold in half a cup sour cream until creamy.
  • In a 9x13 inch baking dish, spread half the Fritos on the bottom, layer half the beef mixture on top, then sprinkle with half the shredded cheese.
  • Repeat layers with the remaining Fritos, beef mixture, and cheese.
  • Bake uncovered at 350°F for 20 minutes or until the cheese is bubbly and melted.
  • Garnish with sliced green onions and serve with extra sour cream, guacamole, salsa, and jalapenos as desired.

Notes
