  • 1 pound ground beef preferably something with a bit of fat for flavor
  • 1 small onion chopped fine to mix well
  • 1 package taco seasoning 1-ounce size works great
  • 1 can (10 ounces) diced tomatoes and green chiles undrained so you get all the juice
  • 1 can (15-½ ounces) pinto beans rinsed and drained to keep things neat
  • 1 can (15-¼ ounces) whole kernel corn drained so no extra water
  • 1 package (9-¼ ounces) corn chips base and crunch to layer in
  • 2 cups shredded Mexican cheese blend melts real good
  • toppings sliced green onion, black olives, pico de gallo, sour cream, avocado or guacamole, sliced jalapenos if you like some heat

  • Start by turning your oven to 350°F so it's ready when your casserole needs that bake at the end.
  • Heat 1 teaspoon canola oil in your pressure cooker or a skillet over medium heat. Toss in your ground beef with chopped onion and cook till that beef is browned and the onions get soft. Drain any fat so the casserole doesn't get greasy.
  • Stir in the taco seasoning so it coats everything well. Add the diced tomatoes and green chiles with juice, pinto beans, and corn. Let it cook for 5 minutes, stirring sometimes to mix flavors.
  • Grab a 9x13 inch baking dish and start layering. Spread half the corn chips down first. Pour half the beef mixture over it and sprinkle half the cheese on top.
  • Repeat layering with the rest of the chips, beef mixture, and cheese so you get three layers total.
  • Bake uncovered in the preheated oven for 15 to 20 minutes till cheese is bubbly and melted.
  • Let it stand for 5 minutes after you pull it out before digging in.
