This warm artichoke bacon dip is a creamy, tangy, and flavorful appetizer perfect for parties and game day events. It combines crispy bacon, smooth cheeses, and artichoke hearts cooked quickly in a pressure cooker and finished in the oven for a golden top.
Preheat oven to 350°F (175°C). Finish the dip in the oven to get that golden top.
Cook the bacon strips in a skillet over medium heat until real crisp. Lay them out on paper towels and crumble once cooled. Crispy bacon is key.
In the same skillet, toss in the chopped red onion. Cook till soft and translucent, about 3-4 minutes. Add minced garlic and cook an extra minute.
In a mixing bowl, combine mascarpone, cream cheese, sour cream, lemon juice, kosher salt, and chopped artichoke hearts. Mix in cooked onion, garlic, and crumbled bacon until well blended.
Transfer mixture into a baking dish and even out the top for even heating.
Bake the dip for about 25 to 30 minutes until piping hot and light golden brown on top.
Serve warm with your favorite crackers, bread, or fresh veggies on the side.
