  • 3 tablespoon Diced Red Onion
  • 2 cloves Garlic Minced
  • 1 Cup Heavy Cream
  • 2 Cups Queso Blanco separated (homemade or store bought)
  • Cup Salsa Verde
  • 2 Cups Cooked and Shredded Chicken
  • 6-8 Flour Tortillas
  • 1 Cup Pepper Jack Shredded
  • To taste Fresh Cilantro Chopped optional

  • Preheat your oven to 375 degrees Fahrenheit. This is where the enchiladas get that perfect bake at the end for bubbly cheesy goodness.
  • Heat the olive oil in a skillet over medium heat. You remember this part coz it sets the base for all those awesome flavors.
  • Add the diced jalapeno, red onion, and garlic. Sauté till they're soft and smell dang good, about 3 to 4 minutes.
  • Stir in the heavy cream, 1 cup queso blanco, salsa verde, and lime juice. Keep cooking until the mixture smooths out and heats through—you'll see it get all creamy.
  • Remove this mix from heat and fold in the shredded chicken. You want that chicken fully coated in the queso goodness.
  • Spread a thin layer of the queso mixture on the bottom of your baking dish. Warm up those tortillas slightly so they don't crack when you roll them.
  • Fill each tortilla with the chicken mix, roll 'em up and place seam side down in the dish. Pour the rest of the queso sauce over, sprinkle remaining queso blanco and toss that baby in the oven for 20 to 25 minutes till bubbly and brown on top.
  • Let it cool a bit before serving.

Notes

Use pre-cooked rotisserie chicken to skip shredding and cooking time. Swap salsa verde for mild green enchilada sauce if you want less heat. Warm tortillas in microwave wrapped in damp paper towels to keep them pliable. Mix cilantro right into the sauce if you don’t want it loose on top. For less cleanup, cook the queso sauce directly in your pressure cooker skillet insert.
