Instructions
Instructions
Preheat your oven to 350°F (175°C) since we’re gonna bake the cake layer right after mixing.
Grease and flour a 9x13 inch pan so your cake won’t stick. It’s a little imperfect step but worth it.
Mix dry ingredients - flour, baking soda, baking powder, salt, cinnamon, nutmeg. Whisk them good so you don’t see clumps.
Whip eggs, oil, sugar in another bowl till smooth. Then stir in that fresh grated zucchini making sure it’s mixed even.
Combine wet with dry slowly and gently. Don’t overmix just till you don’t see dry flour spots.
Pour batter into pan and bake 40-50 minutes. Stick a toothpick in center after 40 minutes - it should come out clean. Cool in pan 10, then wire rack to chill.
Grate zucchini ahead and store in a bag in the fridge. Saves scrambling on baking day.
Use pre-measured dry mixes stored in airtight containers to speed the flour and spices step.
Combine sugars with oil first so they dissolve smooth and quick.
Notes
Serve warm and enjoy the tender, moist zucchini cake with a cup of coffee or tea. Store leftovers wrapped at room temperature or refrigerated for freshness.
