  • 200 g Feta cheese crumbled
  • 6 Eggs large
  • 1 cup Cherry tomatoes halved
  • 2 tablespoon Olive oil extra virgin
  • 1 teaspoon Dried oregano
  • to taste Salt
  • to taste Black pepper freshly ground

  • Preheat the pressure cooker on the sauté setting and add olive oil.
  • Add cherry tomatoes and cook for 2-3 minutes until softened.
  • Sprinkle dried oregano over the tomatoes.
  • Add crumbled feta cheese on top of the tomatoes.
  • Crack the eggs over the feta and tomatoes, spacing them evenly.
  • Season with salt and freshly ground black pepper to taste.
  • Close the pressure cooker lid and cook on high pressure for 3 minutes.
  • Allow the pressure to release naturally for 5 minutes, then quick release any remaining pressure.
  • Carefully open the lid and serve the baked feta eggs warm.

Notes

For a spicy twist, add red pepper flakes before cooking. Serve with crusty bread or pita to soak up the delicious sauce.
