Preheat the pressure cooker on the sauté setting and add olive oil.
Add cherry tomatoes and cook for 2-3 minutes until softened.
Sprinkle dried oregano over the tomatoes.
Add crumbled feta cheese on top of the tomatoes.
Crack the eggs over the feta and tomatoes, spacing them evenly.
Season with salt and freshly ground black pepper to taste.
Close the pressure cooker lid and cook on high pressure for 3 minutes.
Allow the pressure to release naturally for 5 minutes, then quick release any remaining pressure.
Carefully open the lid and serve the baked feta eggs warm.
Notes
For a spicy twist, add red pepper flakes before cooking. Serve with crusty bread or pita to soak up the delicious sauce.
