Close the lid, set the valve to 'Sealing,' and cook on high pressure for 8 minutes.
Once the cooking time is up, do a natural release for 5 minutes, then switch to a quick release for any remaining pressure.
Carefully remove the chicken breasts from the pot and set them on a cutting board to rest for a few minutes.
Slice the chicken and serve it drizzled with the broth from the pot, garnished with fresh parsley if desired.
