Ingredients
  

  • 4 pieces boneless, skinless chicken breasts About 1.5 pounds.
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1 tablespoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup chicken broth
  • 2 tablespoons fresh lemon juice Optional.

Instructions
 

  • Season the chicken breasts with salt, black pepper, oregano, and thyme on both sides.
  • Set the Instant Pot to the 'Sauté' mode. Once hot, add olive oil and let it heat for a minute.
  • Place the seasoned chicken breasts in the pot and sear for about 2-3 minutes on each side until golden brown.
  • After searing, add the minced garlic and sauté for an additional 30 seconds, just until fragrant.
  • Pour in the chicken broth and lemon juice, making sure to scrape the bottom of the pot to deglaze it.
  • Close the lid, set the valve to 'Sealing,' and cook on high pressure for 8 minutes.
  • Once the cooking time is up, do a natural release for 5 minutes, then switch to a quick release for any remaining pressure.
  • Carefully remove the chicken breasts from the pot and set them on a cutting board to rest for a few minutes.
  • Slice the chicken and serve it drizzled with the broth from the pot, garnished with fresh parsley if desired.

Notes

For a more intense flavor, marinate the chicken breasts in the seasoning mix for about 30 minutes before cooking.
This dish pairs well with steamed vegetables, rice, or mashed potatoes.
Ensure the chicken is cooked to an internal temperature of 165°F for safety.
