Ingredients
  

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 cups cooked chicken, shredded or diced Leftover rotisserie chicken can be used for easier preparation.
  • 4 cups chicken broth
  • 2 cups mixed vegetables Carrots, peas, corn.
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • to taste none salt
  • to taste none pepper
  • 1 can (8 count) refrigerated biscuit dough
  • optional none fresh parsley For garnish.

Instructions
 

  • Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté for about 5 minutes until it becomes translucent.
  • Add the minced garlic and sauté for an additional minute until fragrant.
  • Stir in the shredded chicken, chicken broth, mixed vegetables, dried thyme, paprika, salt, and pepper. Bring the mixture to a gentle boil.
  • Once boiling, reduce the heat and let it simmer for 10 minutes, allowing the flavors to meld together.
  • While the pot is simmering, preheat your oven according to the biscuit package instructions.
  • Open the can of biscuit dough and separate the biscuits. Cut each biscuit into quarters and drop them carefully into the simmering chicken mixture.
  • Once all the biscuit pieces are in, cover the pot and let it simmer for an additional 10 minutes without lifting the lid. This will allow the dumplings to steam and cook through.
  • After 10 minutes, check the dumplings for doneness; they should be fluffy and cooked through. If they need a little more time, cover and simmer for a few more minutes.
  • If you need to, place the uncovered pot in the oven (according to biscuit package instructions) to achieve a golden-brown top for about 5-10 minutes.
  • Once done, serve hot, garnished with fresh parsley if desired.

Notes

For a creamier version, you can add half a cup of heavy cream to the broth before adding the dumplings.
Adjust the vegetable mix according to your preference, and feel free to use leftover rotisserie chicken for even easier preparation.
