Ingredients

  • 200 g Pasta any type, such as penne or fusilli
  • 1 cup Mozzarella cheese shredded
  • 1 cup Parmesan cheese grated
  • 1 cup Fontina cheese shredded
  • ½ cup Gorgonzola cheese crumbled
  • 1 tablespoon Olive oil
  • 2 cloves Garlic minced
  • ½ cup Heavy cream
  • 1 teaspoon Salt to taste
  • ½ teaspoon Black pepper freshly ground
  • 1 tablespoon Butter unsalted
  • 2 tablespoon Fresh basil chopped
  • ¼ cup Pasta cooking water reserved

  • Boil the pasta according to the package instructions. Reserve ¼ cup of the cooking water and drain the rest.
  • In a large pan, heat olive oil over medium heat, then add minced garlic and sauté until fragrant.
  • Add the heavy cream and butter to the pan, stirring until the butter is melted and the mixture is well-combined.
  • Lower the heat and stir in the mozzarella, parmesan, fontina, and gorgonzola cheeses until melted and smooth.
  • Add salt and black pepper to taste.
  • Toss the cooked pasta in the cheese sauce, adding the reserved pasta water to reach desired consistency.
  • Garnish with fresh basil and serve immediately.
