Preheat your oven to 350°F. Prepare a 13×9 baking dish by lightly buttering it or spraying with non-stick cooking spray.
Set aside ½ cup of the shredded cheese and about ¼ of the bacon pieces. In a medium bowl combine the cream cheese and mayo, then stir until well combined. Add in the remaining shredded cheese, bacon and green onion pieces and mix well.
Slice the chicken breasts into cutlets for faster cooking. Pat dry and season with salt and pepper.
Heat butter or olive oil in a large skillet over medium-high heat. Sear the chicken on each side until golden brown, but don't cook through.
Place the seared chicken cutlets in the prepared baking pan. Spread the cream cheese mixture evenly over the chicken. Top with reserved cheese and bacon pieces.
Bake for 30-40 minutes or until chicken reaches an internal temperature of 165°F. Serve warm.
Notes
Leftovers can be refrigerated in an airtight container for up to 3 days. Use a meat thermometer to avoid overcooking.
