  • 2 Lbs Boneless Skinless Chicken Breast
  • 8 oz Cream Cheese softened
  • ¼ Cup Mayonnaise
  • 8 Bacon Slices cooked crispy & crumbled
  • ½ Cup Chopped Green Onions about 4
  • 1 ½ Cups Shredded Cheddar Cheese
  • Salt & Pepper
  • 1 tablespoon Butter or Olive Oil

  • Preheat your oven to 350°F. Prepare a 13×9 baking dish by lightly buttering it or spraying with non-stick cooking spray.
  • Set aside ½ cup of the shredded cheese and about ¼ of the bacon pieces. In a medium bowl combine the cream cheese and mayo, then stir until well combined. Add in the remaining shredded cheese, bacon and green onion pieces and mix well.
  • Slice the chicken breasts into cutlets for faster cooking. Pat dry and season with salt and pepper.
  • Heat butter or olive oil in a large skillet over medium-high heat. Sear the chicken on each side until golden brown, but don't cook through.
  • Place the seared chicken cutlets in the prepared baking pan. Spread the cream cheese mixture evenly over the chicken. Top with reserved cheese and bacon pieces.
  • Bake for 30-40 minutes or until chicken reaches an internal temperature of 165°F. Serve warm.

Notes

Leftovers can be refrigerated in an airtight container for up to 3 days. Use a meat thermometer to avoid overcooking.
