Ingredients
  

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 medium carrots, chopped
  • 2 stalks celery, chopped
  • 1 bell pepper, chopped
  • 4 medium potatoes, diced
  • 1 can (14.5 oz) diced tomatoes, with juice
  • 4 cups beef broth
  • 1 cup green beans, chopped (fresh or frozen)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • to taste salt and pepper
  • 2 tablespoons olive oil
  • for garnish fresh parsley, (optional)

Instructions
 

  • In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté for 3-4 minutes, until the onion is translucent.
  • Add the ground beef to the pot. Cook until the meat is browned, breaking it up with a wooden spoon, about 5-7 minutes. Drain any excess fat.
  • Stir in the chopped carrots, celery, and bell pepper. Cook for an additional 5 minutes, stirring occasionally.
  • Add the diced potatoes, diced tomatoes (with juice), beef broth, green beans, thyme, basil, salt, and pepper. Stir to combine.
  • Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for 30-35 minutes, or until the vegetables are tender.
  • Taste and adjust seasoning if needed. Serve hot, garnished with fresh parsley if desired.
  • You can customize this soup by adding other vegetables like zucchini or corn.
  • This soup can be stored in the refrigerator for up to 3 days or frozen for later use.
